AEG, the world leader in sports and live entertainment, manages one of the UK's busiest events venues — a regular on the concert circuit for global artists and home to some of London's best bars and restaurants, catering for every taste from fast food to fine dining.
The Challenge
The Operations Director for the Entertainment District & Outlet Shopping wanted to ensure every restaurant and bar within the venue implemented a consistent, best-in-class grease management regime. The goal was to eliminate the risk of fats, oils and grease (FOG) entering the sewerage system — reducing the likelihood of blockages, lowering energy demands on wastewater treatment, and extending the life of pump stations.
Equally important was sustainability. Rather than treating grease as waste, the venue wanted to capture it at source for reuse, supporting its commitment to a circular economy. The team needed a knowledgeable advisor who could unify processes across all tenants, provide real-time data access, and deliver staff training and best practice guidance — with the tact to bring every outlet on board.

The Solution
AEG approached grease management and sustainability experts, Magnete. Following an initial site assessment, Magnete produced a detailed report whose recommendations were fully accepted and implemented.
The programme of work included repairs to existing grease traps, investment in new equipment, and the roll-out of new best practice maintenance routines. Magnete also provided each outlet with access to a dedicated app, enabling teams to log daily grease management activity and giving the facilities management team real-time visibility of FOG data across the entire site.
