Case Study: Achieving Full FOG Compliance Across Multiple Food Businesses
A busy Food Innovation Centre was home to a wide range of food start-ups, each with different processes, products and levels of awareness around FOG compliance. To create a joined-up approach, the project began with a full FOG compliance survey across every unit, identifying risks, gaps in process, drainage concerns and areas where education was needed.
The survey helped engage every client by giving them clear, practical feedback on their own operation, rather than applying a one-size-fits-all solution. This created stronger buy-in, improved understanding of legal and operational responsibilities, and allowed tailored actions to be put in place across the centre.
Following the review, clients received guidance, education and practical support to improve grease management, maintenance routines and day-to-day kitchen behaviours.

The Outcome
As a result, the centre achieved full FOG compliance, created a more consistent operating standard across all tenants, and significantly reduced drain issues, blockages and reactive maintenance.
