The Operations Director - Entertainment District & Outlet Shopping wanted to ensure that every restaurant and bar within the venue implemented similar, exceptional, grease management policies and regimes, to remove any concerns about fats, grease or oil entering the sewerage system. If waste fat and oil from cooking and food waste is injudiciously poured down the drain, then it can significantly increase the risk of sewer blockages. Moreover, minimising grease in a site’s wastewater reduces the amount of energy required for large-scale wastewater treatment and increases the life of pump stations, while reducing maintenance requirements.
Justas importantly, despite being waste products, fats and oils are still high-energy resources with considerable value. By preventing grease entering the drain and, instead, capturing it at source, the venue could ensure this product could be reused as part of its determination to promote a circular economy.
The operations team identified the need for an advisor who could implement a more unified and efficient grease management approach for eatery tenants, and provide easy, routine access to data. Furthermore, the advisor needed to offer tactful support for all tenants, to help bring them onboard with the new processes and procedures, including staff training and best kitchen practices to manage waste grease.
The client approached grease management and sustainability experts, Magnete.Their first action was to conduct a site assessment. Magnete shared the results in a report; this was accepted and its recommendations were implemented.
The schedule of work included repairs to existing grease traps, the purchase of some new equipment, and the adoption of new best practice maintenance routines. The Magnete team also provided each outlet with log-in access to an app to record their daily grease management maintenance routines to provide the facilities management team with real-time access to their grease management data.
